A Recipe for Willowtree
Corn Bread
This is just a simple recipe for corn bread. For some reason I am not able to find my cookbook with my favorite recipe but will post it when I find it. I might have loaned it out.
1 cup corn meal
1/2 cup flour
1/4 cup sugar
1/2 teaspoon salt
3 teaspoons baking powder
2 eggs
1/2 cup milk
1/4 cup shortening
Mix it all together. Pour into a well-greased baking pan. Bake in hot oven (425ยบ) for 20 to 25 minutes.
There ya go Pete! Next time you have beans try some cornbread with 'em.

Yep - we might have to proclaim this National (or International?) WillowTree day. If it weren't a Sunday I would have taken the day off work.
Thanks Julie. I'm making another batch today. I don't know if I'll have trouble getting the corn meal but I'll give it a shot.
Marnie. It's too late to start sucking up now, the votes have been counted.
Beans and cornbread - two staples in our house. Your recipe is similar to mine - I'm going to try yours one day this week.
Willowtree - Is there no corn meal in the Outback? How does one survive w/o it?
Do you ever make cornbread in an iron skillet? This is my husband's preferred method, and he swears by it...though I never had seen it done that way before. He just pops it in the oven - and there is some strange "oiling" method he uses to store the skillet after use.
Okay - now I'm all paranoid that my husband is just weird.
Hey Julie,
Here's another DE LISH US cornbread recipe...with just a few calories thrown in;)
1 cup self rising cornmeal
1 can cream-style corn
1 cup sour cream
1/2 cup vegetable oil
2 eggs
Mix 'em all together & pour into a cast iron skillet (I guess it works in glass or metal pans, too). 350 degree oven for about 45 minutes.
What in the heck did WT's comment about calendars mean? Makes no sense to me, lol.
Being a regular reader of WillowTree - I have to say "Not fair, not fair!" Step out of town for ONE weekend, and you all throw a cornbread party is his honor. sheesh.
